Fried Food Fest 2012

Friday night we got together for our second annual Fried Food Fest at my parent's house. This year April's parents came and we had a blast!

Dad and Jonathan got the fryers fired up while us girlies finished getting all the veggies and meat chopped up. 
We did tempura battered sweet potatoes, zucchini, onion rings, mushrooms and pickles. Then we did some cornbread battered hotdogs (GF, nitrate free and delicious!), chicken and steak. And finished up with GF pumpkin and regular donuts. 

A little blurry, but having fun! The kids spent most of their time either eating fruit and veggies or running around yelling in the dark. 

Susan and Gordon hopped right in and became fry masters! 
We used our small fryer for all the gluten-free stuff and the giant turkey fryer for everything else.

Mmmmmmm! GF pumpkin donuts! Delicious!!!!

Here are the recipes that we used. I don't mean to brag, but the tempura batter was AMAZING!!!

Tempura Batter
1 cup brown rice flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 cup cold water

Mix dry ingredients and whisk in water. Add extra water if needed until batter is runny enough to stick on the veggies but not as thin as pancake batter is. 

Corndog Batter
1 cup brown rice flour
1/2 cup coarse ground cornmeal
2 tsp baking powder
1/2 tsp salt
1/4 cup applesauce (or oil of your choice)
1 cup milk (we used goat)
2 tsp honey

Stir all ingredients together  Batter will be thick and clumpy. Add extra milk as needed until batter is thick and will stick to the corndogs. 

GF Pumpkin Donuts
3 1/2 cups rice flour flour
4 tsp baking powder
1 tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 cup sugar
3 Tbsp butter (room temp) (I use applesauce)
1 large egg
2 large egg yolks (can substitute all eggs for 4 egg yolks)
1 tsp vanilla extract
1/2 cup + 1 Tbsp buttermilk (I used goat milk)
1 cup canned pure pumpkin (I always use double)

Whisk first 8 ingredients in a bowl to blend. Using an electric mixer, beat sugar and butter in large bowl until blended (will be grainy). Beat in egg, then yolks and vanilla. Gradually beat in buttermilk and pumpkin. Add dry mixture and mix until well blended. Refrigerate if not using immediately. 

The dough will be runny/clumpy. I use a spoon and make blobby donut-hole shapes with it. You can add more flour if it is too runny, but I like to add the extra pumpkin to get a good pumpkin flavor to them.

Saturday Fun Day

We woke up early Saturday morning to go to Medford and see the new Trader Joe's store that opened on Friday! Woo hoo!! We (well, us ladies at least) were very excited!!
Everyone was sleepy and wanted to stay snuggled with daddy on the couch

Trader Joe's had cute little kid sized shopping carts. Gabriella was having a blast with hers!

Looks like Gramma found some good deals and filled her cart up fast

We browsed through REI. The kids were having fun running behind the sleeping bag display. If you look closely you can see two little pairs of feet. 

Toys R Us was having a Free Lego Building Day so we stopped in. The kids got to build a creation and take it home with them.

After Medford we rushed home, tossed our groceries in the house, grabbed the crockpot and headed to April's parents's house for pumpkin carving and dinner.

Jonathan made caramel apples and we took one home with us for Gabriella. She insisted on eating it in the bathtub. Score for me, one less mess to clean up!!


All in all it was a BLAST of a day!!

James's 5th Birthday Party

Friday night we celebrated James's 5th birthday (his actual birthday is Tuesday). All of us were there, plus Gramma and Grampa, Susan & Gordon (April's parents), Hannah (April's sister), and my sister's boyfriend and his kiddos. We had a full house!!

We had a great party. Its so fun to watch all the kids playing together and to have some great chit-chat with the grown-ups.

I Can Feed Myself!

We started letting Xander try to feed himself in the evenings before his bath. He actually does pretty good (as you can see in the video) understanding the motion (spoon into dish and then to mouth).


He is quite amusing to watch. 
I love how excited babies are to get to learn and try new things!

"I Lost All My Friends and Cousins!"

We had a lot of fun playing with cousins this weekend and Gabriella was very sad to go home to our house each night.

We headed home Friday night after dinner and a full house at my parents house. The whole way home Gabriella jabbered about how much fun she had with her friends and cousins. 

Saturday morning she woke up and came out to Matt with a pouty face. She held out her hands and said, "I lost all my friends and cousins!"

She was super happy when we headed back out with our crockpot full of soup for dinner Saturday night.

After dinner we went for a ride in Uncle Jonny's go-kart. 
Gabriella said she needed earmuffs cuz it was too loud and she cried the entire time we were in it. 
She said, "I have fun in the go-kart but I not want to go again. It is TOO loud!"

The Grants Pass Pharmacy gets in black licorice ice cream once a year for Halloween. Jonathan bought a dish of it and brought it to mom's. Everyone (except me and Matt) had a bite.

Auntie April was knitting and Gabriella came running up and said, "I need some pokey things so I ca knit a scarf too!" We got her a couple crochet hooks and she sat next to April for at least 20 minutes playing with a piece of yarn and the hooks. It was so cute!!

We had a fun weekend and it was great to see my cousin Sarah and Reilly and Aunt Linda!
