I have two kids and am married to the greatest guy in the world. We got married in 2006 and have been passionately pursuing each other, life and Jesus ever since. After a miscarriage and a PCOS and infertile diagnosis in 2008 we started looking into adoption to expand our family. We found out we were pregnant with our daughter, Gabriela,  in June of 2009. She was born in February of 2010 while I was a teacher at a local private school.

A year later in 2011, I was so sick from PCOS that we decided to make a drastic diet change. We went grain, dairy and legume free for six weeks and promptly got pregnant with our son Xander. I felt so good that we added back in grains and stayed gluten free. After Xander was born I had to stay off dairy again because it made him sick when I ate it and nursed. In early 2014 I found out I had some terrible stomach infections (Candida, giardia, c diff) and a whole new list of food allergies/intolerance: sugar, msg, gluten, oat, rice, peanut, dairy and seafood. Phew!

We currently have two adorable and wonderful kiddos who are with us and three who are in Heaven waiting for us. We are looking forward to the day that day when our family is completely reunited.

I am a passionate person. I am passionate about health and helping others learn how to eat and live healthy lifestyles. We were "paleo" before there was even a term for it and have been gluten free long enough to remember the days of terrible tasting pasta and when quinoa wasn't a normal word to use in conversation. Eating healthy doesn't have to be time consuming and expensive. It is all about little changes that make a big impact. All of my recipes are easy and simple. They are also in expensive and easy to find ingredients.


Matt and I are currently getting our foster care license so that we can open our home to kids who need a place when there isn't one for them. We are very excited as we look towards the next stage of our lives!

This blog is filled with recipes, reflections and life. I love canning and my crockpot! I hope that it encourages and inspires you!
