Frozen Watermelon Screwdriver

It's summertime and watermelon is abundant. This drink is smooth, creamy and the perfect way to wind down a warm summer night.

I loved how much texture it had. It reminded me of an adult slurpee, minus the sickly sweet syrup taste.

Remember to drink in moderation and never ever drink and drive! There is no excuse for drunk driving!!

The watermelon needs to be cubed up and frozen solid ahead of time. Cubes about one inch in size are optimal since they blend up easier, but really any size will do. Once your watermelon is frozen you are ready to go!

Ingredients:
2 cups frozen watermelon
1/4 cup orange juice
1 shot potato vodka (so it is gluten free)
The juice from half a lemon
1/2 teaspoon Organic Coconut Sugar (optional)

Put all ingredients into a blender or Magic Bullet . Blend until the watermelon is completely blended and mixture is smooth and starting to get foamy. This takes a minute or two depending on the size of your cubed watermelon. 

Pour into a glass and enjoy right away. 

Makes 1 serving.

Non Dairy Strawberry Cream Soda

This weekend we celebrated my friend's 30th birthday. Between the two of us we have over a dozen food allergies/intolerances so the menu for dinner was quite thought through. But one thing we both new we wanted: a creamy fizzy fruity drink!

We found a recipe online and modified it to be non dairy, no sugar added, and no carrageenan. Here is what we came up with!

Ingredients:
1 cup Hempmilk Unsweetened
2 cans (12 ounce size) of RW Knudsen Sparkling fruit juice (no sugar added) berry flavor
     *Can also use plain carbonated water
2 cups mashed organic strawberries

Have all ingredients chilled. Rinse and coarsely mash the strawberries. Evenly divide and spoon the mashed strawberries between 4 glasses. Pour 3/4 cup of carbonated juice/water into each glass. Pour 1/4 cup of hemp milk into each glass. Stir gently to blend and serve immediately.
